The NO ROLL Sugar Cookie

Yes, you heard me right! This is hands down the best sugar cookie recipe ever and it does NOT require rolling out cookie dough!
I know you will love this recipe as much as we do.
COOKIE RECIPE
1 Cup Butter room temp
3/4 Cup Coconut oil (vegetable oil works too)
1 Cup Sugar
3/4 Cup Powdered Sugar
2 TBSP Water
2 Eggs
1 tsp Almond Extract
1/2 tsp Baking Soda
1/2 tsp Salt
5 Cups Flour
FROSTING RECIPE
1/2 Cup Butter
1/4 Cup Sour Cream
2-3 Cups Powdered Sugar (thicken to desired consistency)
1/2 tsp Almond Extract
STEP 1: Combine butter, oil, sugars, water and eggs. Beat until fluffy.
STEP 2: Combine dry ingredients in a separate bowl and add to butter mixture small amounts at a time until combined. Dough should be soft, not sticky. Add more flour in small amounts if too sticky.
STEP 3: Use a cookie scoop to make balls that are heaping over the scoop.
STEP 4: Slightly roll each cookie ball in your hands to smooth them out.
STEP 5: On a plate put a small scoop of granulated sugar. Using the bottom of a drinking glass dip in the sugar. Sometimes I put a small amount of cooking spray on the bottom of the cup to get the sugar to stick.
STEP 6: Gently press down on each cookie ball till about 1/4” thick. Between each cookie dip the glass back in the sugar.
STEP 7: Bake 8-10 minutes at 325 degrees. The cookie should not turn brown on the bottom.
These cookies are great with or without frosting and I LOVE them cold! They also freeze amazing to eat at a later time!
